I always thought it was more respectful to do that with elders, and I was never able to do that with my aunts and uncles.

It's very common in immigrant or multilingual families for people to speak to each other and reply in different languages, depending on how strong they are in what they consider their second language. I love that she is the only one beside Rogelio who speaks Spanish in the show. All rights reserved. But we're not allowed to treat one another badly.

I think the talking Spanish thing is only intended as a gag, kind of like Raj in the Big Bang theory not being able to talk to women without alcohol. She said she would never love him as much as her husband, but ended up deciding on yes!
Even though this does make communication difficult down the road, especially for third generations, they make this decision because they feel it will give their children the best chances in the US. Lastly, have fun!
I never disliked Alba. If my mother was speaking to me in Spanish, I would respond in Spanish and vise versa with English. I also come from a bilingual family and this is exactly how it is.
